Soup time!

It's really freakin' cold outside. What's your favorite soup to make?

here's a really yummy and healthy one. got it from cooking light a few years ago.

roast 4 chopped up small tomatoes in olive oil under high temps in your oven until they are browned on the edges.
while you're doing that, brown some fresh garlic, one cup chopped onion, 1 and 1/2 tsp curry powder and about 2/3 of a cup of orzo (it's a rice-like pasta) in a soup pot, in just a little bit of butter. add several cups of chicken broth to the orzo and cook till the orzo is soft, maybe 15 minutes ... then add the tomatoes back in, and right at the end, add in a bag of fresh spinach. cook till it wilts. oh yummy!

16 bean soup with ham bone in it. It's so easy too.

prepare beans for cooking
put a chopped onion in
throw in whatever spice smells good at the moment.
chuck a ham bone with lots of ham still attached
then forget about it till you can no longer ignore the wonderful smell.

We like to eat it with real bread (the kind that you can break your teeth eating unless you're sopping up soup with it).

My fave soup is Garden Vegetable soup: Ingredients:
2/3 cup sliced carrot
1/2 cup diced onion
2 garlic cloves
3 cups broth (beef, chicken, or vegetable)
1 1/2 cup diced green cabbage
1/2 cup green beans
1 tablespoon tomato paste
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/2 cup diced zucchini

Directions:

In a large saucepan, sprayed with nonstick cooking spray, saute carrot, onion, and garlic over low heat until softened, about 5 minutes. Add broth, cabbage, beans, tomato paste, basil, oregano, and salt; bring to a boil.

Lower heat and simmer, covered about 15 minutes or until beans are tender. Stir in zucchini and heat 3-4 minutes. Serve hot.

My 7yo even enjoys it!
